Multicolored Martini Mashed - Simply Kosher with Jamie Geller |
| Jamie Geller from Kosher.com shows you how to make Multicolored Martini Mashed Potatoes. Prep: 30 minutes Cook: 30 minutes Chill: none Yield: 8 to 10 servings Ingredients 11 cups cold water 1 ½ teaspoons salt 5lbs (or 17 medium) Russet or Idaho potatoes, peeled and cut into 1-inch chunks 1 cup margarine, softened ½ cup non-dairy creamer 2-4 tablespoons Gold's red horseradish, divided 2-4 tablespoons Gold's wasabi sauce, divided 2-4 tablespoons Gold's bb-q sauce, divided 2 shallots chopped, sautéed in olive oil (optional) Preparation Instructions - Place water, salt and potatoes in a 6-quart soup pot, cover and bring to a boil. Reduce heat to low and simmer, covered for 25 to 30 minutes, or until potatoes are tender. - Drain potatoes thoroughly and return them to the pot or a large bowl. - Using a wire masher or fork, mash potatoes until desired texture is reached. - Mix in margarine and non-dairy creamer until well combined. - Separate into 4 equal batches and add 1 Gold's topping to each of 3 batches, leaving one batch plain (the exact measurement is 1 tablespoon of topping per 1 cup/serving of mashed potatoes). Mix to blend. - Spoon into martini glasses for a colorful and gorgeous presentation, top each with a drizzle of remaining topping. - Sauté chopped shallots in olive oil over medium heat until golden and crispy and top plain mashed potatoes with a few spoonfuls if desired. |

Prep: 12 minutes Cook: 4 minutes Chill: none Yield: 4 to 6 servings Ingredients 1 tablespoon olive oil 2 pounds tuna steak 1½ teaspoons kosher salt ½ teaspoon black pepper 2 red onions, peeled and diced 2 scallions, white and half of the green part (about 6 inches), sliced 2 ripe Hass avocados, peeled, pitted and diced For dressing: 4 tablespoons olive oil 1½ teaspoons Gold's wasabi sauce 4 tablespoons lime juice 10 dashes Tabasco sauce (about ½ teaspoon) 1 teaspoon dried coriander or 1 tablespoon fresh minced cilantro Preparation Instructions - Heat olive oil in a 12-inch skillet over medium-high heat. - Wash tuna, pat dry and rub with salt and pepper. - Sauté 2 minutes on each side, until seared. Tuna should be cooked outside and still raw inside. Set aside. - In a small sauce pan, combine dressing ingredients and warm over medium-low heat. - Place onions, scallions and avocado in salad bowl. - Cut tuna into 1-inch chunks and add to bowl. - Pour dressing over salad. Serve at room temperature.
